I read every where in surf magazines i see on resort websites or facebook westerner working as surf guide or photographer.
BUT from all my research it seems it is not legal for westerner to do this work in Indonesia/ get work visa.
All also hear of a guy getting busted and deported from indonesia who worked as surf guide, and hear you can get blaklisted
How do these guys/companys get away with it?

pretty simple u have to have a work visa KITAS

Actually you can only get Kitas (work visa) for select jobs, you can't get kitas for being a surf guide or surf photographer if work in resort/surf camp, you can only get kitas for select positions.
You can only get kitas for Resort manager or Chef or skipper of boat or like dive instructor, and only if you have experience in those areas, i guess most just do it on the sly hence why guys are always doing runs to renew visa in KL or Singapore.
Personally i wouldn't risk it as yes you can get deported or worse.
